Airam, Fluffy Pancakes | 30 mins - easy
[Prep time: 5 mins | Cooking time: 15 mins | Serves: 8-10 Pancakes]
Ingredients
1 1/2 cups of flour
(can even use self-raising flour)
3 tbsp of sugar
2 tsp of baking powder
1 tsp of salt
1 tsp of baking soda*
2 eggs (Room Temperature)
1 cup of milk (240ml)
2 tbsp of melted butter (28g)
1 teaspoon of vanilla extract (5ml)
Instructions
What I like to do is first initially mix all the dry ingredients (flour, sugar, baking powder, salt, baking soda) separately in a bowl first then in another bowl: whisk the eggs, add milk, melted butter/oil, vanilla extract and mix it all well. Then combine those two and gently mix the whole thing. Don't overmix it imo, lumps are a good thing!
Then when it's all done, heat up a pan, oil/butter it, throw in a scoop of batter. Let it cook until you see bubble and dry edges. Then flip dunk it and let it get cooked on the other side. For the next scoop, re-oil the pan, and rinse and repeat.
Throw in some maple syrup or nutella, whichever way you prefer and there you have it.
