Kay, Creamy Mushrooms | 40 mins - easy


I used to hate mushrooms as a kid, but then I don't know what happened, maybe it was all the shrooms I did but now I love mushrooms. I mean if you think about it there will always be more mycelium and more spores, after we're all dead the fungus will recycle us and transfer us as nutrients along their network to feed hungry plants. Mushrooms are the ultimate food. You should eat them. That said this is my fav recipe for cooking them:

Serves: 4

Ingredients

200g button mushrooms
2 cups of fenugeek leaves (methi)
[could also use Kasuri methi instead to make it easier]
1 large Onion
4 tbsp Ghee/Oil
1 tsp Red chilli powder
1/2 tsp Dry mongo powder (amchur)
2 tbsp of ginger garlic paste
1/2 tsp cinnamon powder
Salt to taste
1/2 cup Fresh cream

Instructions

  1. (if not using kasuri methi) After cleaning, washing and chopping of the stems of methi leaves, blanch them in boiling water for 2 mins and then put it in cold water.
  2. Do not wash the mushrooms as they are basically a sponge and will soak the water, instead rub them in some flour and then wipe it with a wet cloth. After cleaning is done, half slice the mushrooms.
  3. Now heat ghee/oil in a pan. Add the chopped onions and cook till they are translucent.
  4. (if not using kasuri methi) Add the chopped meth leaves and sauté.
  5. Add ginger garlic paste and continue to sauté for a minute more.
  6. Add red chilli powder and mushrooms. Cook for 3-4 minutes.
  7. (if using kasuri methi) Add the kasuri methi (around 2 tbsp)
  8. Add amchur, cinnamon powder and salt. Mix well and cook for 2 to 3 mins.
  9. Add cream and mix it well.
  10. Add 1/2 cup of boiling water in the end and let it boil for a minute more before serving.
